There is a custom recovery, firmware and root. Perhaps there are some scripts or archives that will get rid of google services. You just need a specific firmware, but services are already embedded in it, but I would like to live without them.
This is possible, but it requires some knowledge of how the Android platform works.
Option one is to get root rights and uninstall applications using special software (in the search you will be given a normal choice)
Option two - see custom firmware for the device. They come without OpenGoogleApps by default. At your discretion, you can install your own set of Google applications
